Collection: Black garlic

Black garlic? What is it? A new type of garlic? Dyed garlic? Is it even edible? It's not a special type of garlic, but rather is made from regular white garlic through warm fermentation. During the fermentation process, the carbohydrates contained in the garlic are caramelized, or converted into sugar. A simultaneous Maillard reaction creates the dark color. And yes, it tastes delicious!
